Spicy Spinach Artichoke Dip

Spicy Spinach Artichoke Dip
A delicious spicy artichoke dip recipe!
Ingredients
- 1 14 oz. can non-marinated artichoke hearts
- 1 cup fresh baby leaf spinach
- 1 small red onion, diced
- 1/2 cup light mayonnaise
- 1/2 cup sour cream
- 1/2 cup shredded pepper jack cheese
- 1/4 cup grated parmesan cheese
- 1 tbsp. extra virgin olive oil
- 1 tsp. lemon juice
- 1 tsp. hot sauce
- Salt and pepper, to taste
Instructions
- Drain, quarter and dice artichokes.
- Preheat oven to 400 degrees.
- In large skillet over high heat, add oil, artichoke, spinach and onions until vegetables are lightly sauteed.
- In large mixing bowl, combine vegetables, mayo, sour cream, cheeses, hot sauce, lemon juice and salt and pepper.
- In greased baking pan, add mixture.
- Bake for 20 minutes or until dip turns golden brown.
