Easy Breakfast Idea: Alaska Salmon Cream Cheese Recipe
Having seafood at breakfast is vastly underrated in my opinion. Fish and grits, bagels and lox, even lobster omelets. These are all solid morning meal options. The Dietary Guidelines for Americans recommends that the average American consume 8 ounces of seafood per week, so why haven't we embraced seafood as a legitimate breakfast item?

In our household, we've been making a concerted effort to cut out unhealthy items in our household diets and trying to eat more foods with all-natural ingredients. Part of this means incorporating more seafood into our diet. Alaska Seafood is a great way to accomplish that. It is naturally loaded with minerals, vitamins, and heart-healthy omega-3 fatty acids.

So in an effort to get more seafood on the breakfast table using all natural and healthy ingredients without processed ingredients or preservatives, here is a simple recipe that uses fresh Alaska sockeye salmon to create a flavorful cream cheese spread that can be used on your favorite breakfast bread.

Believe it or not, this recipe is pretty simple to set up. Using salmon, chives, milk, and lemon juice, and you can create your own cream cheese that tastes better than store bought! I was amazed at how easy it was to “whip” the cream cheese in a food processor, and the salmon blended together nicely at the end.

What you need:
Alaska Salmon Cream Cheese

Ingredients
- 5 cups whole milk
- 4 oz. Alaska salmon, ground
- 3 tbsp. lemon juice
- 1 oz. chives, finely chopped
- 1/2 tsp. red pepper flakes
- 1/2 tsp. sea salt
Instructions
- In a large pot, bring milk to a rolling boil over medium-high heat. Stir continuously to avoid scalding.
- Reduce heat to medium. Add one tsp. of lemon juice and stir for 1 to 2 minutes.
- Repeat twice more with lemon juice until large curdles form.
- Using cheesecloth, separate curds from the liquid. Cool solids for 15 minutes.
- In a food processor, add curds, salt, and pepper. Puree for 3 to 4 minutes until material forms a smooth and light consistency.
- Combine cream cheese mixture with chives and salmon. Add additional salt to taste.
- Serve on bagels, toast or muffin. Recipe yields 10-12 ounces.
